Heating Things Up with Siren Rock Brewery's Stout Beer Chili Recipe

A Chili Recipe with Beer and a Fantastic Craft Beer Event.


LUCK (Local Urban Craft Kitchen) Dallas, hosted their 5th Annual Craft Beer and Chili Challenge with all of the breweries in Dallas - Ft Worth. We love a good Craft Brewery Event, so Siren Rock Brewing Company was in attendance with our Mexican-inspired Chocolate Milk Stout and Mole Poblano Chili recipe. Yes, you heard that right, a chocolate milk stout beer chili!

Although the day was a little cold and rainy, the event was so much fun and all of the beer chili recipes were AMAZING. Our friends at Thirsty Bro Brewery in Royse City actually took home the day's top honors, so that of course was an added bonus to the end of a fantastic day and a win for Rockwall County.

Although we didn't win, we had a great time and I personally think our recipe was phenomenal. So, I thought it would be fun to share a little about the event, show some photos and videos from the day, and of course share our Milk Stout Beer Chili Recipe for you to make at home. LUCK (Local Urban Craft Kitchen)

First of all, if you haven't been to LUCK in Dallas you absolutely have to go. They are located in Trinity Groves which is a really cool destination spot near downtown Dallas. There are a variety of great restaurants, retail shops, a few outdoor patios, and an amazing view of the Dallas skyline. LUCK is one of those great restaurants here, and in their own words...

LUCK is a craft beer inspired kitchen, whose mission is to promote the craft beer industry by designing dishes that not only pair well with beer, but that also use beer as an ingredient.

And they take that mission pretty seriously. They have like 40-something beers on tap, and they really work hard to give local breweries a shot at rotating in and out of there taps as often as possible. Their menu is basically local Texas comfort food. One of my favorite dishes at LUCK are the Sweet and Smokey Wings, which are whole smoked chicken wings. AMAZING! Anyway, between the food, the people, and the awesome craft beer events they do throughout the year, it really is a great place to eat and try local craft beer from around DFW.

Craft Beer and Chili Challenge

Of course the day was about chili. Craft beer chili to be exact, and every brewery brought out their best recipes. The colors were vibrant from all of the various brewery tents, and the chili smelled amazing as it wafted in the air from booth to booth.

The entire Siren Rock team was in attendance, including our event photographer Justin Romeyn who documented the day and all of its glory. This was actually our first main beer event, so it was really great to be able to be side-by-side with so many of the best breweries Dallas has to offer (even if it was for chili and not beer).

In addition to the chili, one of the most popular items of the day was our beer bread which is actually a family recipe passed down from my great-grandmother. Just like our Milk Stout beer chili recipe, the beer bread was made with a hearty dose of our Magnetic Muse Chocolate Milk Stout. Nothing beats a bowl of piping hot chili and some warm beer bread on a cold and rainy day, so it was the perfect pairing. To be honest, I am actually hoping we can figure out how to have the beer bread at the brewery somehow. But, I digress.

We love people and we love to share our passion with people. It was so much fun meeting everyone who stopped by our tent to grab grab some chili and chat with us. As usual, our VP of sales Ed Pham was doing what he does best and telling everyone who would listen, everything there is to know about Siren Rock.

Stout Beer Chili Recipe

Well I promised a Chocolate Milk Stout and Mole Poblano Chili recipe, so here it is. For best results, pick out a four-pound boneless tri-tip roast from your local butcher that is about 3/4 to 1 inch thick and nicely marbled, and have it ground on a medium-thick setting. Plan this meal well in advance, because you will want to marinate the tri-tip in the Chocolate Milk Stout for at least 6 hours to really bring out that chocolate and slightly roasted flavor deep down into the meat.

Of course you will also want to drink lots of Siren Rock Magnetic Muse Chocolate Milk Stout throughout the entire process, or whichever other of the awesome Siren Rock Beers you happen to have on-hand. So grab a pint glass and get to cooking.


YIELD: Makes about 1 Gallon

  • 6 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 2 teaspoons dried basil
  • 1 teaspoon cayenne pepper
  • 1 teaspoon crushed red pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cloves
  • 2 bay leaves
  • 1 teaspoon vanilla extract
  • 2 cinnamon sticks
  • 4 tablespoons Stubb's Beef Spice Rub
  • 4 pounds ground tri-tip
  • 2 tablespoons canola oil
  • 2 pounds white onions, coarsely chopped
  • 11 garlic cloves, minced
  • 1 pound green bell peppers, seeded, cut into 1/2-inch pieces
  • 1 pound red bell peppers, seeded, cut into 1/2-inch pieces
  • 2 large jalapeño chilis with seeds, chopped
  • 2 teaspoons minced canned chipotle chiles in adobo sauce*
  • 1 28-ounce can crushed tomatoes with puree
  • 2 28-ounce cans fire-roasted diced tomatoes
  • 1 6-ounce can tomato paste
  • 24 ounces beef bone broth
  • 3 12-ounce cans Siren Rock Brewery The Magnetic Muse Chocolate Milk Stout
  • 2 15-ounce cans kidney beans, drained
  • 6 1-ounce squares bittersweet chocolate, chopped
  • Sour cream
  • Chopped green onions
  • Coarsely grated extra-sharp cheddar cheese
  • *Found in the Latin foods section at your local supermarket

Preparation

Marinate tri-tip beef in one 12-ounce can of Siren Rock Chocolate Milk Stout for up to 6 hours. Drain excess beer from meat, pat dry, and coat tri-tip in Stubb's Beef Spice Rub. Set aside.

Toast cumin and coriander in skillet over medium heat until it darkens and begins to smoke, about 4 minutes. Set aside and let cool.

Sauté beef in heavy large pot over medium-high heat until no longer pink, about 8 minutes. Heat oil in large skillet over medium-high heat. Add onions, garlic, bell peppers, and jalapeños. Sauté until vegetables begin to soften, about 15 minutes. Add mixture to pot with meat. Mix in toasted spices, chili powder, basil, cayenne pepper, crushed red pepper, oregano, thyme, bay leaf, vanilla extract, cloves, cinnamon sticks and chipotle chiles. Cook until the spices are aromatic, about 2 minutes. Add crushed tomatoes, diced tomatoes, tomato paste, beef broth and beer. Bring chili to boil, stirring occasionally. Reduce heat and simmer, stirring often, until beef is tender and liquids have thickened, about 2 hours.

Add beans and chocolate. Simmer 20 minutes until the chocolate melts, stirring occasionally. Remove cinnamon sticks and bay leaves. Season to taste with salt and pepper. Ladle chili into bowls. Serve with sour cream, green onions, and cheese.
